I reached a big goal this week! I am officially more than halfway to my weight goal!!
I haven’t talked about my health and fitness on here because honestly I was uncomfortable and scared. Weight is something that I have struggled with for as long as I can remember. But the reality is this has been a long but healing year and I’ve made great progress. As of November 4, 2014 I have lost 31 pounds out of the 60 I plan on losing.
My health has definitely become a MUST and not just something that I should probably do. I know that the choices I make with my body won’t just effect me, but the future of my family. One of my BIG motivators is that my wonderful hubby and I want to start a family in the near future. I want to make sure that I not only have a healthy pregnancy and birth, but a healthy lifestyle. I want to live that out and not just talk about “what you should be doing” in theory.
Currently, my short term fitness goal is to lose another 10 pounds by Christmas. I would like to get involved in a local community that will encourage and motivate me in my fitness journey. I’ll keep you wonderful people updated on how my search goes. Are there any programs you like to do at home or a with a group? What motivates you to stay or get healthy?

So I have not posted anything for a while, this is largely due to kidney stones and the passing of my Grandmother on my mom’s side. I am sorry that I haven’t been very consistent but both have taken a while to recover from.
I hope to be posting at least every other week starting this Wednesday (09.18.13) and will also keep up with my goal of sharing more main dishes with you. Anyway, I hope you all have been enjoying this wonderful summer and took advantage of making fun memories : )

This is what one of the finished plates looked like (minus some hash browns). This is the link to the original recipe for the most amazing waffles I’ve ever had and made. They always turn out light and crisp but not burnt, they come out of my waffle iron easily, great flavor, PLUS any left overs I just put in a freezer bag and pop them in the toaster the next day for even more waffle enjoyment 🙂 What I do to make them gluten free is just use a gluten free flour mix.
Oh and I have forgotten to note that gluten free flours with garbanzo bean flour or fava bean flour can make the dough (or whatever you’re making) taste kind of funky (think Bobs Red Mill baking mix and their chocolate chip cookie mix) after you bake it, it usually will turn out fine but I feel like even though I can’t have normal gluten things, I should be able to taste my gluten free cookie dough and not instinctively make a yuck face.
Anyway, I really like the flour blend I use and it typically works great as a cup for cup substitute when I am adopting a recipe to make it gluten free. You can find the flour blend that I use here (over in the recipe section).
The Best waffles (and Pancakes) You Will Ever Have!
- 3/4 cup milk
- 2 tablespoons white vinegar
- 1 cup Gluten Free flour blend (use a cup for cup gluten free flour blend, it just makes everything easier)
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 2 tablespoons butter, melted (I use olive oil)
- cooking spray (I don’t use this, but you can)
- Combine milk with vinegar in a medium bowl and set aside for 5 minutes (or longer) to “sour”.
- Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into “soured” milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
- Heat a large skillet (or waffel iron) over medium heat, and coat with cooking spray. Pour 1/4 cupfuls (or however much you would like, or is appropriate for your waffel iron if you are making waffels) of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

So I have married into THE best family ever! I love my husbands family especially all of the women. This June we are doing a girls weekend at a spa resort to 1) get together and hang out since we all live across the nation and 2) to celebrate my Aunt and my (new) Mom’s 50th birthdays that are happening this year. I am really excited but nervouse at the same time. This will be the longest I’ve ever been away from my new husband and I need to find some party dresses.
My new home is the gym lol. I love that I am apart of this family and I am so grateful that I get to spend time with them 🙂
