So the recipe was simple enough to follow, and when they turned out they turned out beautiful as you can see. The problem I was having though is that the batter wasn’t spreading evenly in the waffle iron, and I tried several different techniques . Maybe it was because I have a Belgium waffle iron (warring pro, thanks to my wonderful Mother-in-love), or maybe I need to tweak the batter consistency when making it gluten free.
Besides that the flavor was WONDERFUL ! They came out light and airy and crisp too! They just didn’t look vey pretty every time ( I’ll post a picture of that later). Oh another fun thing about this recipe is that it says not to oil or grease your waffle iron because of the oil in the recipe, I was skeptical at first but it totally worked thankfully, because who really likes to spend more time cleaning??
Quick note before we get started, I doubled this recipe because I know that my particular waffle iron uses more batter then what most recipes say. For example Food Network says this is a recipe that will make about 4 waffles, I doubled it and got between 5 and 6. So just keep that in mind 🙂
(Gluten Free) Waffle of Insane Greatness
- 3/4 cup Gluten free flour blend ( I added maybe a 1/4 cup more, Or 1/2 cup total since I doubled it)
- 1/4 cup Corn starch (I added a coule of extra Tbsp’s more, 1/4 cup total on top of doubling it)
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup whole milk or buttermilk ( I used whole milk)
- 1/3 cup vegetable oil
- 1 egg
- 1 1/2 teaspoons sugar
- 3/4 teaspoon vanilla extract (Again always add a little more when making gluten free)
- Butter and syrup, for serving
In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes (I know this part may sound odd, but trust me when making gluten free letting your batter sit for a bit can make a huge difference).
Pre-heat a waffle iron. Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily. Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup.
