So Thanksgiving is coming sonner that I would like at moments but the fun thing that I LOVE about this holiday season is the smells. I absolutely love the smell of of cinnamon, turmeric, pumpkin pie spice, rain, and snow. It makes me want to cozy the house, grab my husband and snuggle up to “White Christmas” while sipping eggnog. That is something else that I love, eggnog. I wait all year for eggnog and eggnog lattes. The only thing that has been missing this season is the cold weather, Oregon has been freakishly warm this year. Oh well Knitting, baking, holiday crafts, and walks are still super fun : )
So in honor of this wonderful (yet warm) season I am making Gluten Free Cinnamon Biscotti with Chocolate and fresh Hazelnuts. My house smells so good right now and it’s surprisingly easy to make! I got the original recipe here.
Gluten Free Cinnamon Biscotti with Chocolate and Hazelnuts
3/4c Softened butter
1c White sugar
2 1/2c Gluten free flour mix
Big dash of Cinnamon
3/4tsp Baking soda
Pinch of salt
1 1/2c Semi sweet chocolate chips
1) With a mixer (or strong and vigorous arms) blend the sugar, eggs, butter, and vanilla.
2) Sift together the dry ingredients in a separate bowl, then incorporate the dry to the wet ingredients slowly. Once they are mixed add in the chocolate chips and the hazel nut.
3) On parchment paper or greased pan form the dough into 2 logs and bake for 30 min. Take the logs out and let them cool completely.
4) Once it has cooled cut the logs into 1/2″ – 1″ thick pieces and place them face up on the pan and bake again for 10 minutes turing over once during the baking process. Cool, then enjoy with a delightful cup of coffee : )
